Need a meal on the table in under 30 minutes with zero dough-rising, zero kneading, and zero stress? This puff pastry pizza is the hack you didn’t know you needed. One block of store-bought puff pastry, a quick homemade sauce (or your favorite store-bought jar), and you’ve got a golden, flaky, cheesy sheet pan pizza that’s ready faster than delivery — and it cuts into perfect little squares for lunchboxes the next day.
I make a version of this on weeks when I’ve got zero energy left for a “real” dinner (so, many weeks 😅), and it’s become one of those recipes Layla, Fahad, and Riyad request on repeat. They especially love when they can add the toppings themselves. This makes it so much fun for them to customize.
If you’re looking for more fast weeknight wins, this sits right alongside this deconstructed zucchini and this pink pasta — go check those out too.

With school back in session, this is exactly the kind of make-ahead, cut-into-squares recipe that earns its spot in the lunchbox rotation.
The idea to use puff pastry for a pizza crust was inspired by how well my spinach and mushroom puff pastry quiche went over.

- No yeast, no proofing, no rolling out sticky dough — the puff pastry does all the work
- Ready start to finish in about 30 minutes (10 min prep, 20 min cook)

- Endlessly customizable — use whatever cheese and toppings you’ve got.
- Cuts into neat squares that pack beautifully into a lunchbox, warm or cold.
- A genuinely kid-approved way to get dinner (or lunch) on the table fast.
Why is it worth making homemade pizza sauce?
I love making the easy homemade pizza sauce on my website, it seriously requires just 5 minutes of effort and makes pizza taste SO much better. You don’t need to worry about any chemicals or preservatives or corn syrup or anything else hiding in there.
My recipe makes a big batch, so you’ll have plenty leftover (absolute gold in the freezer!) I freeze the extra sauce in little 1/4 cup portions (you can also use ice cube trays) then transfer to a big freezer safe bag, so it’s ready for future meals.
Ingredients you need:

For the pizza sauce (makes a big batch):
- Olive oil- use good quality extra virgin olive oil so the flavor really shines through
- Garlic, minced
- Crushed tomatoes- get this in cans
- Tomato paste
- Granulated sugar- a pinch balances out the acidity of the tomatoes
- Salt
- Dried basil
- Dried oregano (you can also sub the basil and oregano both for Italian seasoning)
- Freshly ground black pepper
- Red pepper flakes (optional, if you like heat)
To assemble:
- Toppings of your choice — I used pepperoni, sliced green bell pepper, sliced black olives, and thinly sliced red onion. Let your kids choose their favorite toppings, you can get really creative.
- Puff pastry, thawed — this is your no-fuss pizza crust. I get a big puff pastry block so it’s easy to roll out in one layer, you can also get puff pastry squares and press the seams together.
- Beaten egg, for an egg wash
- Pizza sauce (homemade above, or store-bought)
- Shredded mozzarella cheese
How to make the easiest puff pastry pizza:

- Step 1: Roll out the puff pastry dough into a rectangle shape on a lightly floured surface.

- Step 2: Brush all over with an egg wash, then outline a crust, prick all over with a fork.

- Step 3: Blind bake until light golden brown.

- Step 4: Spread prepared sauce evenly on top.

- Step 5: Top with whatever toppings you like or have on hand.

- Step 6: Bake another 10 minutes until cheese is melted.
Hint: Make sure the puff pastry crust is thawed so it’s easy to roll out- but not so soft that it becomes too sticky. Still chilled to the touch but not frozen is a good benchmark.
Pro Tip
Lightly flour the surface that you’ll roll the dough out on, so it doesn’t stick and maintains its shape.
How to serve:
This works warm out of the oven, at room temperature, or straight from the fridge — which is exactly what makes it a lunchbox winner. Cut it into squares or strips depending on little hands. For dinner, I’ll serve it with a simple side salad to round things out.

Recipe variations:
Toppings: I used pepperoni, green bell pepper, black olives, and red onion, but this is really a blank canvas — load it up with whatever you have.
Hot honey pepperoni puff pastry pizza: Try a version with a drizzle of hot honey or chili crisp before serving.
Middle Eastern twist: Brush the blind-baked crust with olive oil and a sprinkle of za’atar before adding sauce, and swap the mozzarella for halloumi.
Veggie-loaded: Skip the pepperoni and pile on extra vegetables instead.
Single puff pastry pizzas: You can use puff pastry squares to make individual little puff pastry pizzas. It’ll take more time to spread the sauce and toppings on each, which is why I usually make one big sheet pizza instead. But individual squares definitely have their cuteness appeal
See my super famous mini homemade pizzas if you want a version with a 30 minute homemade pizza dough.
Storing Leftovers:
Store leftover squares in an airtight container in the fridge for 3-4 days. Reheat in the oven or air fryer to bring the crust back to life — the microwave will leave you with a soggy, sad pastry, so skip it if you can.
To freeze the baked pizza: let squares cool completely, then wrap individually and freeze. Reheat straight from frozen in the oven or air fryer until warmed through and crisp again. (And remember — your extra sauce freezes separately too, for up to 3 months, so next time you can skip straight to assembling.)

Expert tips and tricks:
- Keep the pastry cold until baking for the best puff (see Pro Tip above).
- Brush thoroughly with the egg wash to get a really golden, beautiful crust.
- Make the sauce ahead and freeze in small batches so future pizza nights come together even faster.
- Use a sheet pan, not a pizza stone — this is a sheet-pan-specific hack.
- Have your kids help you with topping the pizza, it’ll get them more invested in eating the end result!
Top Tip
The blind bake step is the whole trick here. Skipping it might feel like a shortcut, but it’s actually what makes this hack work — it’s the difference between a crisp base and a limp, soggy center under wet toppings.
Recipe FAQs:
Yes — the recipe works fine with store-bought sauce if you’re short on time. I like making a big batch of homemade sauce and freezing portions so it’s ready to go for next time.
You’ll want to thaw it first so it unfolds and rolls out without cracking, but keep it cold rather than letting it sit out and get warm.
Yes — bake it the night before, let it cool completely, then store in the fridge. It slices and packs well cold or reheated.
Yes — spreading sauce, sprinkling cheese, and arranging toppings after the blind bake are great kid-friendly steps. Save the hot pan handling for an adult.

Puff Pastry PIzza
Equipment
- baking sheet
Ingredients
For a big batch of pizza sauce:
- 2 tablespoon olive oil
- 2 cloves minced garlic
- 2 cans crushed tomatoes 450g per can (15 oz)
- 1 small carton tomato paste 170g (6 oz)
- 1/2 tablespoon granulated sugar
- 3/4 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- freshly ground black pepper to taste
To assemble:
- 1 block puff pastry, thawed 400g (14oz)
- 1 beaten egg
- 1/4 cup pizza sauce (homemade or store bought)
- 1 cup shredded Mozzarella cheese 115g
- toppings of choice I used pepperoni slices, 1/4 of a green bell pepper sliced, sliced black olives, and some thinly sliced red onions
Instructions
Make the pizza sauce:
- Add the olive oil to a saucepan and heat over medium. Add the garlic cloves and cook 1-2 minutes or until soft and fragrant.
- Add the crushed tomatoes, tomato paste, sugar, salt, basil, oregano, some pepper, and red pepper flakes if using. Stir to combine.
- Cover the pot and simmer for 15-20 minutes on low heat. Cool and set aside 1/4 a cup to use for the recipe, you can freeze the rest (I divide it into 1/4 cup amounts and freeze for up to 3 months) or refrigerate for up to 5 days.
Assemble:
- While you cool the sauce, preheat the oven to 425F (220C)
- On a lightly floured counter, roll out the thawed puff pastry into a thin rectangle, almost as big as a standard baking sheet. Transfer this rolled out dough onto a parchment paper lined baking sheet. Using a butter knife, lightly score the outline a crust all around so you don't spread the sauce too far out. Prick the dough all over with a fork, and brush all over with some of the beaten egg.
- Blind bake on the middle rack of the preheated oven for 10-12 minutes until the dough turns a light golden brown.
- Remove from the oven, spread evenly with the pizza sauce, and sprinkle the cheese evenly over the top. Top with whatever else you like, then place back in the oven for another 10 minutes or until golden brown and cheese is melted and bubbly.
- Cut into even squares, sprinkle with red chili flakes (optional) and enjoy!

Notes
- This sauce recipe makes more than you need for one pizza — measure out 1/4 cup, then freeze the rest in 1/4 cup portions for up to 3 months (or refrigerate up to 5 days).
- Store-bought pizza sauce works fine too if you’re short on time.
- Don’t skip the blind bake — baking the crust alone for 10-12 minutes before adding sauce and toppings is what keeps the base crisp instead of soggy.
- Keep the puff pastry cold right up until it goes in the oven for the best puff. If it’s softened while rolling it out, chill the sheet pan for 10 minutes before baking.
- Keep in an airtight container in the fridge for 3-4 days. Reheat in the oven or air fryer to re-crisp — the microwave will leave the crust soggy.
- Baked and cooled squares freeze well individually wrapped; reheat from frozen in the oven or air fryer until warmed through and crisp.
