What are flourless monster cookies?
These are gluten free monster cookies, made with gluten free old fashioned or rolled oats, and no flour at all!
Monster cookies traditionally combine peanut butter, oats, chocolate chips and m&ms. All these things put together are absolutely delicious. Great flavor combination.

Why should I make these gluten free monster cookies?
They are absolutely delicious. Perfect balance of ingredients with a great chewy texture.
The sweetness is super balanced in these, and there’s only 1/2 cup of brown sugar! That’s much less than most equivalent recipes, but trust me it’s enough!

No mixer is required to make these easy gluten free monster cookies, just a bowl and a wooden spoon. The dough comes together in a flash, and kids love helping.

What makes these monster cookies healthy?
They are packed with protein from the peanut butter, and fiber from the rolled oats.
They have no butter, just a couple tablespoon of coconut oil.
The amount of sugar in them is greatly reduced to only 1/2 cup for the whole batch. Also, theres no flour or refined carbs in these cookies!
Ingredients you need for flourless monster cookies:

Peanut butter: You can use natural unsweetened peanut butter if you prefer, but you might want to increase the sugar to 2/3 cup if you do so. I used regular store bought chunky peanut butter, would also be delicious with creamy peanut butter.
Light brown sugar: You can also use dark brown sugar, but make sure it’s the sticky type of sugar not a grainy one like demerara. I use only 1/2 cup to a really good result, but feel free to up this to your preference.
Eggs
Vanilla
Rolled oats: Old fashioned oats, not the quick cooking type. If you want gluten free monster cookies make sure you use certified GF oats.
Baking soda
M&Ms and chocolate chips: These are the classic monster cookie mix-ins! I like to save a few pieces of each to top each rolled cooke dough balls with to make the cookies pretty.

What mix-ins can you use for monster cookies?
You can use butterscotch chips or white chocolate chips to switch things up.
Try adding some chopped nuts of choice, and shredded coconut (about 1/4 cup of each).
You can also add any chopped candy bars of your choice. This is the perfect way to use up leftover candy that’s hanging around!
To make vegan monster cookies:
In order to make vegan monster cookies, replace the eggs with flax eggs, and mix-in dairy free chocolate chips, any vegan chocolate candies, or instead mix in nuts and raisins or dried cranberries.
How to make healthy monster cookies:

- Preheat oven to 350 F (180C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the peanut butter, coconut oil, brown sugar, eggs and vanilla with a wooden spoon or a spatula until smooth and combined.
- Add the oats, and baking soda until combined, then add the m&ms and chocolate chips and stir until mixed. The batter will be wet, that’s fine!
- Scoop dough onto prepared baking sheets using cookie scoop or rounded tbsp, leaving 2 inches of space between each dough ball.
How to store and freeze leftover cookies:
Leftover cookies last for a few days tightly covered at room temperature.
Freezing cookies: Baked cookies can be frozen once they cool to room temperature. Place in a freezer safe bag or airtight container to freeze for up to 2 months.
To freeze monster cookie dough, first scoop the dough out onto a parchment paper lined baking sheet, and place the baking sheet in the freezer until the dough balls harden, at which point you can put them in a freezer bag for up to 2 months. Cookies can be baked directly from frozen.

- 1/2 cup light brown sugar 100g
- 2 tablespoon coconut oil or butter, melted 17g
- 2 eggs
- 1 teaspoon vanilla
- 1 cup rolled or old fashioned oats, GF certified if necessary 100g
- 1 teaspoon baking soda
- 1/4 cup M&Ms 50g
- 1/4 cup semisweet chocolate chips 42g
Instructions
- Preheat oven to 350 F (180C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the peanut butter, coconut oil, brown sugar, eggs and vanilla with a wooden spoon or a spatula until smooth and combined.
- Add the oats, and baking soda and stir until combined, then add the m&ms and chocolate chips and stir until mixed. The batter will be wet, that's fine!
- Scoop dough onto prepared baking sheets using cookie scoop or rounded tbsp, leaving 2 inches of space between each dough ball.
- Bake for 10-12 minutes until cookies are golden brown on the edges and completely set. Cool completely before enjoying (or enjoy warm, no judgement here!).
