This cauliflower lentil salad with a tahini dressing might be the most filling salad in my whole recipe box — deep golden roasted cauliflower and red onion, hearty lentils, sweet chopped dates, crunchy pistachios, and juicy pomegranate seeds, all pulled together with a creamy tahini dressing.
It’s the kind of roasted vegetable salad that actually holds you over, not the kind you’re hungry an hour after eating. An absolute showstopper on a table, and genuinely one of my favorite ways to turn roasted vegetables into a full meal.

Ingredients you need:

For the salad dressing:
- Tahini — the creamy base of the dressing; use one that’s smooth and pourable, not thick or separated.
- Olive oil — Use a good quality oil as you’ll really taste it in the dressing.
- Lemon juice — the tang in the dressing.
- Honey — balances the tartness; use less if you want a more savory dressing.
- Garlic — one crushed clove for sharpness in the background.
- Salt and black pepper
- Cumin powder — we Middle Easterners often use cumin in any dish that contains lentils or cauliflower, not just for flavor, but because we believe it helps to digest them.
- Water — to thin the dressing to a drizzleable consistency, add gradually.
To roast the cauliflower:
- Cauliflower — cut into pretty equal sized florets.
- Red onion — sliced and roasted alongside the cauliflower.
- Olive oil — for roasting.
- Cumin, salt, and black pepper — a simple seasoning that lets the roasted flavor of the cauliflower itself be the star.
To assemble:
- Cooked lentils — I use a jar of cooked brown or green lentils, drained and rinsed— it keeps this salad quick with zero extra cooking. You can of course cook your own lentils until just al dente, then drain and use in the recipe.
- Dates — chopped Medjool dates for pockets of natural sweetness through the salad.
- Pomegranate seeds — for bursts of tartness and color.
- Fresh parsley — chopped, for freshness against all the roasted and sweet elements.
- Roasted pistachios — you can also substitute another nut of choice, or keep this nut free.

How to make roasted cauliflower and lentil salad:

- Step 1: Add the tahini, olive oil, lemon juice, honey, garlic, salt, black pepper, and cumin powder to a small bowl.

- Step 2: Whisk until smooth and creamy and store in the fridge until ready to use.

- Step 3: Preheat the oven to 425°F (220°C). Place the cauliflower florets in a large baking pan and evenly distribute the red onion slices.

- Step 4: Drizzle thoroughly with olive oil, add salt, black pepper, and cumin powder, and toss to combine. Roast for 25–35 minutes, until deep golden brown, then set aside to cool.

- Step 5: Scatter the cooked lentils in a large serving dish.

- Step 6: Top with the roasted cauliflower.

- Step 7: Top with the dates, pomegranate seeds, pistachios and parsley.

- Step 8: Drizzle with tahini dressing right before serving.
Hint: Don’t be scared to get the cauliflower florets really brown and crispy, you want them to have a roasted flavor and to be completely cooked through.
Pro Tip
Make the tahini dressing one day in advance- it’ll reduce the prep work, and the flavors really meld beautifully together in the fridge.
How to serve:
Serve as a hearty vegetarian main, or as a filling side alongside Arabic Grills or Kafta. This is great both cold and at room temperature.

- Vegan Option- Use maple syrup instead of honey in the dressing
- Nut Free Option – Omit the pistachios
- Cheese Option – Add crumbled goat cheese or feta cheese for even more flavor.
Storing Leftovers:
This salad holds up better than most, since there’s no lettuce to wilt — store leftovers in an airtight container in the fridge for 3-5 days. If you’re prepping ahead, keep the tahini dressing separate and toss everything together right before serving so the cauliflower and lentils don’t turn soft sitting in it.

Expert tips and tricks:
- Cut the cauliflower florets a similar size so they roast evenly instead of some pieces burning while others stay underdone.
- Don’t crowd the roasting pan. Spread the cauliflower and onion in a single layer so they roast and caramelize instead of steaming.
- Whisk the dressing before you start on the cauliflower so it’s ready to go and has a few minutes to come together while everything roasts.
- Taste the tahini dressing and adjust, if you find the tahini flavor is too strong, add a little more honey and olive oil.
Top Tip
Prep the dressing in advance so it’s ready to go, but don’t dress the salad or top with the pomegranate, pistachios, and parsley until ready to serve so that you get the best texture.

You absolutely can, use the green lentils so that they hold their shape- not the orange ones which will turn mushy. Cook until al dente, drain, and use in place of the jarred lentils.

Cauliflower Lentil Salad
Ingredients
For the salad dressing:
- 1/4 cup tahini
- 3 tablespoon olive oil
- 2 tablespoon lemon juice (1/2 squeezed)
- 2-3 teaspoon honey depending on how sweet you want the dressing
- 1 large garlic clove, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cumin powder
- splash of water to thin dressing if needed
To roast the cauliflower:
- 1 large head cauliflower, cut into florets about 700-900g (1.5 lb)
- 1 red onion, sliced
- 2 tablespoon olive oil
- big pinch each cumin, salt, and black pepper
To assemble:
- 1 jar cooked brown/green lentils, drained and rinsed 400 g (15 oz)
- 8-10 large dates, roughly chopped (like Medjool)
- 1/4 cup pomegranate seeds
- 1/4 cup fresh parsley, chopped
- 1/2 cup roasted pistachios
Instructions

- Whisk together all the ingredients for the dressing with a fork until creamy and well combined. If it's too thick to drizzle, add water, 1 teaspoon at a time until it's a good consistency. Store in the fridge until ready to use.
