Core and dice the apples into 1/2 inch cubes. You don't need to peel them!
Add the apples to a high powered blender along with the coconut milk, honey or maple syrup, and cinnamon powder and blend on high speed until creamy and combined.
Pour the popsicle mix evenly into the popsicle molds, leaving a little gap at the top of each mold because the popsicles will expand when they are frozen. You'll probably get between 6-8 depending on the size of your molds.
Either cover with the popsicle topper or insert popsicle sticks in the center. Freeze for at least 6 hours, or overnight.
