1canpetite diced tomatoes OR 3 tomatoes, finely chopped15oz, 400g
1/2teaspoonsalt
1/2teaspoonblack pepper
1/4teaspoonground coriander
splashof water if needed
Instructions
Heat olive oil over medium heat, then add the onions and garlic (both minced and whole). Saute, stirring frequently for 5-6 minutes until onions have softened.
Add the green beans (you don't really need to thaw them), and cook for about 8-10 minutes, stirring occasionally, until beans fully cook through.
Add the diced tomatoes, salt, pepper and ground coriander, and mix. If there isn't enough sauce, add a splash of water. Reduce heat to low and simmer for another 10 minutes. Serve with pita bread and enjoy immediately, or cold!

You can use fresh tomatoes or canned diced tomatoes like I chose to- so easy and still taste delicious.Feel free to omit the ground coriander if you don't have any on hand.I love garlic so I'd add even more whole cloves ! They soften and become creamy and a little sweet by the time this is done cooking.STORING LEFTOVERS: Leftovers taste great- This is usually enjoyed room temperature, but a lot of people eat this cold! It's actually not meant to be a hot dish. They can be stored 3-5 days tightly covered in the fridge.
