This delicious air fryer panko chicken is the crispiest chicken ever, the easiest way to make chicken parmesan. A simple weeknight meal that'll be a surefire hit with your family. So good and packed with flavor.
2-3chicken breasts, butterflied and cut in half to make 4-6 thin cutlets
salt and pepper to season
1cuppanko breadcrumbs
1/4cup freshly grated Parmesan cheese
1teaspoonoregano powder
1/2teaspoonbasil powder
1/2teaspoongarlic powder
2eggs
6slices of provolone or mozzarella cheese, or 1/2 cup shredded mozzarella
1/2cupmarinara sauce, plus extra for serving
cooked pasta noodles for serving, optional
Instructions
Mix together the panko breadcrumbs, Parmesan cheese, oregano, basil, and garlic powder until well combined and transfer to a shallow plate.
Whisk the eggs in a shallow dish or pie plate.
Season the chicken breasts on both sides with salt and pepper.
Preheat air fryer to 375F (190 C). Dip the chicken in the eggs, then dip in the breadcrumbs, coating thoroughly on both sides. Place in a single layer in air fryer basket (you may have to cook in batches)
Cook for 6 minutes in the air fryer then flip the breasts over, top each with a spoonful of marinara sauce and sliced cheese, then cook for another 3-4 minutes until chicken is cooked through and cheese is melted.

You can make this with chicken breasts that you don't cut in half, but they'll need significantly more cook time. Wait until chicken is cooked through before adding the sauce and cheese and cooking a little further until cheese is melted.You can find some brands of gluten free panko breadcrumbs if you want to make this recipe gluten free.I like serving this with linguine or spaghetti noodles, and the extra marinara sauce warmed through for a full meal. It would also be great with a simple arugula salad, or mashed potatoes.Storing leftovers: Leftover chicken parmesan will last 3-4 days tightly covered in the fridge.Reheating leftovers: My preferred way of heating leftovers is right back into the air fryer, this helps crisp up the chicken breasts again. Reheat for 5-7 minutes or until hot enough for your liking.Make ahead and freeze: I'd recommend cooking the chicken completely through without adding the sauce and cheese, and when ready to cook, adding the frozen chicken straight to the air fryer, topping with sauce and cheese and air frying until heated and cheese is melted (probably 6-10 minutes).
