In the bowl of a stand mixer fitted with a paddle attachment, or a handheld mixer, cream together butter, brown sugar, and white sugar for 5 minutes on medium speed until light and fluffy.
Once five minutes is over, add in egg and vanilla and mix until combined.
In a separate bowl, mix flour, baking soda, and salt, and mix until combined. Add these dry ingredients to the butter mixture on low speed, and mix until just combined.
Add chocolate chips and mix until just combined.
Model an aluminum foil insert around the base of the air fryer, using two sheets of aluminum foil. Remove foil from the air fryer, then preheat the air fryer for 8-10 minutes at 350F (180C).
Spray the base of your makeshift foil pan with a little non-stick spray, and press the cookie dough into an even layer into the foil until an inch thick. Depending on how thick you like your pizookie, you may have some dough leftover, perfect for baking extra cookies with !
Once air fryer has heated, place cookie dough pan into the air fryer and cook for 8-10 minutes. Start checking at 6 minutes, then check every minute after. The top will be golden brown, and the center still gooey but not completely raw (I recommend taking a little spoonful out the center to make sure it's cooked enough before removing it). Mine was done at 8 minutes.
Let pizookie rest for 1 minute to firm up a little, then top with a big scoop of vanilla ice cream and enjoy. Absolutely delicious!
