Heat the olive oil in a deep skillet over medium high heat. Add the broccoli, bell pepper, ginger, garlic, and soy sauce. Cook and stir for 3-4 minutes until fragrant, but broccoli still has some crunch. Remove skillet from the heat.
For the tahini sauce:
Whisk together the tahini, soy sauce, sweet chili sauce, apple cider vinegar, and honey until smooth and combined. Set aside.
To assemble:
Cook the pasta or noodles according to package instructions until al dente. Drain, reserving some pasta water. Toss cooked pasta with tahini sauce, add a splash of pasta water to thin out.
Place coated pasta in serving dish, and top with broccoli/bell pepper mixture. Enjoy!

Feel free to add any vegetables you like, or omit them entirely!This would be great with some shredded cooked chicken for a more substantial meal.Taste and adjust the tahini sauce according to your preference, add more honey for sweetness, more chili sauce for more heat etc.
