Tahini Pasta

Nutty and delicious, this easy tahini pasta is going to be your new obsession!

Ingredients

For the veggies:

  • 1 tablespoon olive oil
  • 1 small head broccoli, cut into florets
  • 1 green bell pepper, sliced
  • 1 tablespoon fresh ginger, minced
  • 2 garlic cloves, minced
  • 1 teaspoon soy sauce

For the tahini sauce:

  • 1/4 cup tahini
  • 2 tbsp soy sauce
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon apple cider vinegar
  • 2 teaspoon honey

For assembling:

  • 1/2 pack pasta or noodles of choice, about 200-250g
  • splash reserved pasta water

Instructions

For the veggies:

  • Heat the olive oil in a deep skillet over medium high heat. Add the broccoli, bell pepper, ginger, garlic, and soy sauce. Cook and stir for 3-4 minutes until fragrant, but broccoli still has some crunch. Remove skillet from the heat.

For the tahini sauce:

  • Whisk together the tahini, soy sauce, sweet chili sauce, apple cider vinegar, and honey until smooth and combined. Set aside.

To assemble:

  • Cook the pasta or noodles according to package instructions until al dente. Drain, reserving some pasta water. Toss cooked pasta with tahini sauce, add a splash of pasta water to thin out.
  • Place coated pasta in serving dish, and top with broccoli/bell pepper mixture. Enjoy!

Notes

Feel free to add any vegetables you like, or omit them entirely!
This would be great with some shredded cooked chicken for a more substantial meal.
Taste and adjust the tahini sauce according to your preference, add more honey for sweetness, more chili sauce for more heat etc.
