Add all the ingredients to a high speed blender. Blend until smooth and creamy.
Pour mango mixture into popsicle moulds, leaving a little gap at the top because the mix will expand when frozen. I got six popsicles. Transfer to the freezer and freeze for at least 5-6 hours or overnight.
Remove popsicles from the moulds to enjoy, if they don't come out easily, run the popsicle mould under hot water for a few seconds, then the popsicles will slide right out!
Feel free to substitute maple syrup for honey to keep these vegan. Add more sweetener to taste.
