Smashed Pea Toast

Move over avocado toast, this is another tasty green spread made easy with frozen peas that are heated, seasoned and smashed over toast.

Ingredients

  • 4 tablespoon olive oil, divided
  • 2 garlic cloves minced
  • 1/2 small onion, finely diced
  • 250 g frozen green peas (about 1 cup)
  • salt and pepper to taste
  • pinch of chili flakes

Instructions

  • Heat 2 tablespoon of the olive oil in a skillet over medium heat. Once hot, add the garlic cloves and diced onions and sauté for 4-5 until softened.
  • Add the frozen peas, and cook until softened and easily smushed with a fork.
  • Add the pea mixture to a food processor or blender, and while mixer is running, add the remaining 2 tablespoon of olive oil. Process until a thick paste forms.
  • Taste for seasoning and adjust. Spread on toast of choice and enjoy!
