An incredibly easy and foolproof recipe for all butter pie crust that comes out golden brown and perfectly flaky. Pie baking will never seem intimidating again!

How good is pie? I love me some pie. And what I love more than pie is pie crust. My mom, I kid you not, eats pie filling and leaves behind the crust. It’s blasphemous, but even better for me. This way I get my crust and hers too 🙂

A good pie crust has to be golden and puffy, flaky and delicious. There’s nothing more disappointing then soggy under baked pie crust. Luckily, pie crust is EASY to make. Especially when you follow the instructions in this recipe, adapted from Everyday Annie.

All Butter Easy Pie Crust – Ingredients

Part of the ease in this comes from always having the ingredients on hand. I always have a ton of butter in my fridge, but never have shortening. That’s why I almost never make anything with shortening in it.

Butter: The star of this show. The butter needs to be cold, hard and cubed. What I do is cut the butter while it’s still cold, then immediately put it back in the fridge until I assemble the rest of my ingredients. The reason we want it to stay cold is because we want the butter to retain it’s shape even when mixed in with the rest of the ingredients. Butter is added to the dry ingredients and mixed just until it incorporates, but with small pea sized pieces still intact. These pieces will melt IN the oven instead of outside the oven. This results in flaky little pockets because of the steam the butter lets off as it melts (butter has a lot of water in it).

Dry Ingredients: Flour, sugar and salt.

Ice Cold Water: The water should be really cold, so we keep the pie dough cold – again, we don’t want the butter in the dough to melt till it goes in the oven. I fill a cup with cold water and ice, and keep it in the fridge, then measure out the tablespoons of water directly from the cup of ice water.

How to make the pie crust:

Using a stand mixer fitted with a paddle attachment makes this so easy. You could also use a food processor, or go old school and just make this by hand.

The dry ingredients need to be combined first. Then the cold cubed butter goes in, and mixed on medium low speed until the mixture looks like wet sand and you have little pea sized clumps of butter. Finally, the ice cold water goes in and is mixed until a ball of dough just forms.

If doing this in a food processor, you’d follow the same steps, but pulse instead of mix. By hand, you’d work in the butter cubes with your finger tips or preferably a pastry cutter to keep the butter from getting too warm.

Chilling and rolling the pie dough:

The pie crust needs to chill for at least 30 minutes in the fridge. After that, you can roll it out on a lightly floured surface using a rolling pin into a circle slightly larger than your pie plate. That’ll go into your pie plate to be the bottom crust. Trim any excess dough, and patch any parts where the dough looks thin.

Storing uncooked pie crust:

This recipe makes enough for two pie crusts, meaning you have a top and bottom crust. If making this for single crust use, then you can store the extra crust for later. Store tightly wrapped for 3 days in the fridge or for up to 3 months in the freezer. Thaw for several hours in fridge before using, then roll out as directed in recipe.

Ingredients

  • 2 1/2 cups all purpose flour 315 g
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup cold butter, cut into small cubes 226 g
  • 6 tbsp ice cold water

Instructions

  • In the bowl of a stand mixer fitted with a paddle attachment, briefly mix together the flour, sugar and salt until combined.
  • Add the cold cubed butter and mix on medium low speed until mixture looks like wet lumpy sand. The biggest pieces of butter should be about the size of large peas.
  • Add the ice cold water while the mixer is running on low speed. Combine until the dough just comes together in a ball, then immediately stop mixing.
  • Divide the dough into half (I use a kitchen scale and weigh it out- you'll get two pieces about 307 grams each).
  • Shape each dough half into a rough ball and wrap in plastic wrap. Chill in the fridge for 30-45 minutes before rolling out.
  • After chilling, roll out the dough onto a lightly floured surface to a circle slightly larger than your pie plate and use as directed in your recipe!

Notes

Pie dough can be stored tightly wrapped in the fridge for 3 days or freezer for 3 months. To use after freezing, thaw for several hours in the fridge, then roll out as directed.

This thick and decadent hot chocolate is made with 3 ingredients in approximately 5 minutes. No sugar is added, the chocolate shines for itself. An even easier loose adaptation of @jacquestorres ‘s famous recipe!! Make this and tell me what you think ☕️ ❄️ Ingredients:
3 cups of whole milk
1 heaped tbsp cornstarch
1 cup (150g) good quality dark chocolate, 55-60%
Method:
Bring the milk to a boil in a medium saucepan over medium high heat, then whisk in cornstarch until dissolved. Keep whisking and let it boil for 30 seconds or so. Reduce heat to medium, add the chocolate, and whisk to combine until chocolate has melted and dissolved. Let chocolate milk mixture boil for another minute, whisking vigorously. Pour into mugs and serve warm, topped with whipped cream and marshmallows😍. I love these mugs for coffee, and now for hot chocolate!

Instagram post 2198572670291644763_296112771 Finally got around to visiting @themerchanthousebahrain , an elegant boutique hotel located near Bab al Bahrain. Parking trouble aside, when you enter the hotel it’s an artsy and modern little oasis in the middle of a bustling souk. I went to their onsite restaurant, Indigo, for breakfast. They are known for their rooftop terrace, but it was raining so we sat inside. The vibe was so nice. I loved the decor, the artwork the quirkiness. This goes for the lobby and cozy library located on the premises too- I would definitely try their library afternoon tea just for the setting! Swipe to see more. As for the food, it was simple and good. We tried the French toast, blueberry pancakes, and a great cappuccino. The portions could definitely have been bigger, but they were all enjoyable if not necessarily memorable.

Instagram post 2197152259536478432_296112771 Guys. The forge. Delicious!! I had no idea that @theforge.bh opened up in Riffa (Calidus center, same complex as @kidzvillebh and @black22bh ). The cool thing is it opened up in @seedbahrain ‘s location, but the branch itself offers both The Forge’s menu and Seeds. Today, I was there for aaaall the indulgence. I tried something from every category. Swipe for all the goodness!
-Burgers: the BLT burger and the Mexican. Hit the spot! I loved that smashed griddled patty with caramelized crispy edges. The BLT was completely nostalgic, tasted like the burger of my childhood. The Mexican was super juicy and tasty with the addition of guacamole.
-6 hour slow cooked brisket. Slightly sweet, perfectly tender and shredded with no fat bits! A winner.
-The spicy chicken slider. This was excellent. I ate it cold because I took so long taking photos and it was still crispy and delicious. And I am not a chicken person!
-Sides and dessert: onion rings were probably the best I’ve had in Bahrain, so well seasoned and crunchy with a great homemade herby ranch dip. 
Loaded fries: really good, but even the regular fries hit the spot so I’d probably go for those to save more precious tummy real estate. Brisket croquettes were stuffed with shredded brisket and cheese, so clearly they were a yes.
Finally, my custom made milkshake! You can customize your own but I highly recommend you give my ELC shake a whirl. It’s vanilla ice cream with brownies, salted caramel and shortbread. Deeeelicious 😋.
I love that this is a local homegrown brand, and highly recommend a visit to @theforge.bh for your next cheat day. They also have a food truck to cater your events (I’ve been asked about this). It makes us feel so righteous and millennial 💪🏼🌱 .We started off by throwing in basically whatever we have in the fridge but now we’ve come to a more fine tuned formula. Here’s what we put in to give us a good liter or so of juice (enough for four glasses): Ingredients
3-4 cucumbers
1 bunch parsley
1 lime
1 knob of ginger
8-10 celery stalks
4 green apples
Instructions:
Wash fruits and vegetables. Cut them in half if necessary to fit in the juice tube.
Place in the juice in the order listed. Drink immediately if possible, or chill in the fridge tightly covered until you are ready to drink.

I loved it! 5 bd (non shareable) for a platter with the perfect amount of their bestselling curries, basmati rice, naan, papad, raita, chopped salad, chicken tikka, and ras malai. In the first photo is their vegetarian thali option that swaps out the chicken tikka for a spinach patty type thing which I really enjoyed, as well as the lamb rogan josh and butter chicken for aloo gobi and additional vegetarian curries . I actually loved both platters equally, and can totally see myself ordering the vegetarian option in the future because I’m obsessed with paneer! So yummy, great amount of food and at a great price, I recommend this platter wholeheartedly! Available Sunday through Wednesday in Adliya, Budaiya and Riffa branches 🥘.
